Method
- Build the base. Stir the salsa, onion, garlic, cumin, paprika, oregano, and pepper together in the insert. Leave out extra salt for now because the salsa already supplies some.
- Arrange the chicken. Nestle the thawed chicken into the salsa mixture and turn to coat. Scrape the sides so the mixture sits around the meat rather than drying above it.
- Cook covered. Cover and cook on LOW for about 4–5 hours or HIGH for 2½–3½ hours. Check near the shorter end. The thickest pieces must reach at least 165°F (74°C), and the meat should pull apart easily.
- Shred in a bowl. Transfer the chicken to a bowl and pull it apart with two forks. Keep the cooking liquid in the insert so you can decide how much to use rather than soaking the chicken automatically.
- Adjust the moisture. Stir sauce into the shredded chicken a few spoonfuls at a time. For tacos, stop when the meat is coated but not dripping. If you want thicker sauce, simmer a portion in a saucepan, then mix it back in.
- Finish with lime. Stir in the lime juice and optional cilantro. Taste for salt and acidity. Serve immediately, or keep the finished filling hot at 140°F (60°C) or above until it is portioned.
Notes
10 minutes prep; about 4–5 hours on LOW or 2½–3½ hours on HIGH. Timings vary by appliance; check doneness as described in the method. The card time uses the upper end of LOW cooking plus the finishing stage.
Refrigerate leftovers in shallow containers within 2 hours, or within 1 hour above 90°F (32°C). Store at 40°F (4°C) or below for 3–4 days. Reheat on the stove or in the microwave to 165°F (74°C); do not reheat cold leftovers in the slow cooker.
Freeze portions with a little sauce for up to 2 months for best quality. Thaw in the refrigerator and reheat covered so the shredded meat does not dry out.
