Ingredients

  • 1¾ cups (220 g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1½ teaspoons ground cinnamon
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground nutmeg
  • ¼ teaspoon fine salt
  • ¾ cup (180 g) plain pumpkin purée
  • ¾ cup (180 g) mashed ripe banana
  • 2 large eggs
  • ⅓ cup (80 ml) neutral oil
  • ½ cup (100 g) light brown sugar, lightly packed
  • 1 teaspoon vanilla extract

Equipment

  • 12-cup standard muffin pan
  • Paper liners
  • Mixing bowls
  • Cooling rack

Method

  1. Heat the oven to 350°F (180°C), conventional setting. Line a standard 12-cup muffin pan with paper liners. Measure the pumpkin purée and mashed banana before beginning.
  2. Whisk the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt in a large bowl. Distribute the leaveners well so the muffins rise evenly.
  3. In a second bowl, whisk the pumpkin, banana, eggs, oil, brown sugar, and vanilla until combined. Break up large lumps of brown sugar. Do not taste raw batter containing flour and eggs.
  4. Add the wet mixture to the dry ingredients and fold gently with a spatula just until there are no dry flour pockets. Stop mixing at that point; a few small lumps are fine.
  5. Divide the batter evenly among the twelve cups, filling them about three-quarters full. Bake for about 18–22 minutes, until the tops spring back lightly and a toothpick inserted in the center comes out without wet batter. If the center is wet, continue baking and check again.
  6. Cool the muffins in the pan for 5 minutes, then transfer them to a rack for at least another 5 minutes. Let them cool completely before sealing a storage container so condensation does not make the tops sticky.

Notes

15 minutes prep; about 18–22 minutes baking; 10 minutes cooling. Once completely cool, keep in an airtight container at room temperature for up to 2 days in a cool, dry kitchen, or refrigerate for up to 4 days. In a hot or humid kitchen, refrigerate promptly. Freeze individually wrapped muffins for up to 2 months for best quality. Thaw wrapped muffins in the refrigerator, then warm briefly if desired. Discard muffins with mold or an unusual odor.
