Ingredients

  • 1 cup (190 g) dry long-grain brown rice, rinsed
  • 2¼ cups (540 ml) water, or rice package amount
  • 700 g (about 1½ lb) lean ground beef
  • 500 g broccoli, cut into bite-size florets
  • 2 medium carrots (about 200 g), thinly sliced
  • 1 tablespoon neutral oil
  • 3 garlic cloves, minced
  • 2 teaspoons finely grated ginger
  • 3 tablespoons reduced-sodium soy sauce
  • ⅓ cup (80 ml) water for sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey
  • 2 teaspoons cornstarch
  • 1 teaspoon toasted sesame oil
  • ¼ teaspoon black pepper
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds, optional

Equipment

  • Lidded rice saucepan
  • Large skillet with a lid
  • Mixing jug or small bowl
  • Instant-read thermometer

Method

  1. Cook the brown rice. Prepare the rice with the liquid and timing specified on its package, usually about 35–45 minutes plus resting. Start it first. Mix the soy sauce, sauce water, vinegar, honey, cornstarch, sesame oil, and black pepper in a small bowl and set aside.
  2. Brown the beef. Heat the neutral oil in the skillet over medium-high heat. Add beef, let it brown briefly, then break it into small crumbles. Cook until the meat reaches 160°F (71°C), usually about 7–10 minutes. Drain excessive fat and transfer the beef to a clean bowl.
  3. Steam the vegetables briefly. Add broccoli and carrots to the skillet with 3 tablespoons water. Cover and cook over medium heat for about 4–6 minutes, until almost tender. Uncover and let excess water evaporate. Thick stems may need a little longer than small florets.
  4. Add aromatics and beef. Stir the garlic and ginger into the vegetables for about 30 seconds, adding a teaspoon of water if the pan is very dry. Return the cooked beef. Toss gently so the florets stay intact rather than breaking into small green pieces.
  5. Thicken the sauce lightly. Stir the reserved sauce again and pour it into the hot pan. Bring to a gentle simmer and stir for 1–2 minutes until the sauce lightly coats the filling. Add a splash of water if too thick. Taste before adding any extra soy sauce or salt.
  6. Portion the bowls. Divide rice and filling evenly among four bowls. Finish with green onions and optional sesame seeds when serving. For meal prep, chill promptly in shallow containers. Reheat covered with a little water until the center reaches 165°F (74°C), stirring halfway through.

Notes

Cook ground beef to 160°F (71°C). Stir the cornstarch sauce again just before adding. Follow brown rice package directions. Reheat leftovers to 165°F (74°C).
Refrigerate the bowls promptly and use within 3–4 days, keeping them at 40°F (4°C) or colder. Reheat one portion at a time and return untouched portions to cold storage.
Freeze cooked rice and beef filling for up to 2 months for best quality. Broccoli will be softer after freezing. Thaw in the refrigerator and add freshly sliced green onions after reheating.
