Ingredients

  • 700 g (about 1½ lb) lean ground turkey
  • ⅓ cup (40 g) plain fine dry breadcrumbs
  • 2 tablespoons milk
  • 1 large egg
  • 3 garlic cloves, minced, divided
  • 1½ teaspoons dried oregano
  • 3 tablespoons chopped parsley, divided
  • ¾ teaspoon kosher salt, divided
  • ½ teaspoon black pepper, divided
  • 1 teaspoon finely grated lemon zest
  • 3 tablespoons lemon juice, divided
  • 2 tablespoons olive oil, divided
  • 500 g zucchini, cut into thick half-moons
  • 1 small red onion, cut into slim wedges
  • 1 cup (180 g) regular small-grain couscous
  • 1 cup (240 ml) low-sodium chicken broth, or couscous package liquid
  • 200 g plain Greek yogurt
  • 1 small cucumber (about 180 g), grated and squeezed dry

Equipment

  • Two rimmed baking sheets
  • Large mixing bowl
  • Heatproof bowl with a cover or small lidded saucepan
  • Instant-read thermometer

Method

  1. Prepare the binding mixture. Heat a conventional oven to 425°F (220°C) and line two trays. Mix breadcrumbs and milk in a bowl and leave for 3 minutes. Stir in egg, two garlic cloves, oregano, 2 tablespoons parsley, ½ teaspoon salt, half the pepper, and lemon zest.
  2. Shape twenty meatballs. Add the cold turkey and fold gently until combined. Divide into 20 equal portions and roll lightly with damp hands. Arrange on one tray rubbed with ½ tablespoon oil. Wash hands and utensils that touched raw turkey before preparing ready-to-eat foods.
  3. Roast meatballs and vegetables. Toss zucchini and onion with 1 tablespoon oil, remaining salt, and remaining pepper on the second tray. Bake both trays for about 18–24 minutes, rotating their positions if needed. Check several large meatballs for 165°F (74°C); finish vegetables separately until tender.
  4. Steep the couscous. Bring the broth to a boil. Stir in couscous and remaining ½ tablespoon oil, cover, and remove from the heat. Leave for 5 minutes or package-specified time. Fluff with a fork and mix in 1 tablespoon lemon juice rather than packing the grain down.
  5. Mix cucumber yogurt. Combine squeezed cucumber, yogurt, remaining garlic, remaining 2 tablespoons lemon juice, and remaining parsley. Taste before adding extra seasoning. Divide the sauce among four small pots so it remains separate from the components that will be reheated.
  6. Build and store the bowls. Divide couscous and roasted vegetables among four bowls and add five meatballs to each. Serve with cucumber yogurt. For meal prep, chill cooked components promptly in shallow containers. Reheat the meatballs, grain, and vegetables to 165°F (74°C) and add cold sauce afterward.

Notes

Makes 20 meatballs, five per bowl. Cook turkey to 165°F (74°C). Use fine couscous and squeeze grated cucumber dry. Keep yogurt sauce separate.
Refrigerate the cooked bowls and sauce at 40°F (4°C) or colder and use within 3–4 days. The yogurt topping has its best texture when mixed close to serving.
Freeze meatballs and couscous without cucumber yogurt for up to 2 months for best quality. Zucchini softens after freezing, so freshly roasted vegetables give a firmer result. Thaw in the refrigerator before reheating.
