Method
- Prepare the fresh components. Dice the cucumber, halve the tomatoes, chop the parsley, and crumble the feta. Zest the lemon before squeezing the juice. Keep these ingredients separate while you prepare the warm grain and chickpeas.
- Steep the couscous. Bring the measured broth to a boil in the small saucepan. Stir in the couscous and 1 tablespoon oil, cover, and remove from the heat. Leave for 5 minutes, or follow the package timing, then fluff thoroughly with a fork.
- Warm the chickpeas. Heat 1 tablespoon oil in the skillet over medium heat. Add the chickpeas, garlic, cumin, salt, and pepper. Stir for about 4–5 minutes until the chickpeas are hot and the garlic is fragrant. Add a spoonful of water if the garlic begins catching.
- Mix the lemon dressing. Whisk the remaining tablespoon oil with the lemon juice and zest. Stir half the dressing through the fluffed couscous. Let the grain stand briefly, uncovered, until it is warm rather than releasing heavy steam.
- Build the bowls. Divide the couscous among four bowls. Add the warm chickpeas, cucumber, tomatoes, parsley, and feta, distributing each component evenly. Keeping the fresh toppings on top gives more contrast than stirring everything into hot grain.
- Adjust and serve. Drizzle the remaining dressing over the bowls a little at a time, tasting as you go. Add more salt only if needed after tasting the feta. Serve immediately, or refrigerate separate components promptly for later assembly.
Notes
Use regular small-grain couscous, not pearl couscous. Follow package liquid guidance if different. Keep cool toppings separate until the grain stops steaming strongly.
Refrigerate the grain and chickpeas promptly and keep chopped vegetables, feta, and dressing separate when possible. Use within 3–4 days; the cucumber and herbs taste best earlier.
Freeze plain cooked couscous and chickpeas separately for up to 1 month for best quality. Make the cucumber, tomato, herb, and feta topping fresh after thawing.
